A simple, fresh too vibrant vegetable curry amongst cauliflower, carrots too dark-green peas simmered inward a zesty tomato plant too kokosnoot milk sauce

Ingredients:
  • 1 tablespoon kokosnoot oil
  • 1 pocket-size carmine onion, finely chopped
  • small handful of dried curry leaves, crumbled
  • 1 to ii carmine or dark-green chilies, seeded too minced
  • 1-inch slice fresh ginger, grated or minced
  • 2 cloves garlic, crushed or minced
  • 2 teaspoons solid soil coriander
  • 1 teaspoon solid soil cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon solid soil mustard
  • 1/4 teaspoon cayenne
  • 2 medium tomatoes, finely chopped
  • 2 teaspoons poppy seeds
  • 2/3 loving cup kokosnoot milk
  • 1/3 loving cup water
  • 1 pocket-size caput cauliflower, cutting into pocket-size florets
  • 1 large carrot, chopped
  • 1 loving cup frozen dark-green peas, defrosted
  • 1 teaspoon bounding main salt
  • 1/2 teaspoon garam masala
  • juice from one pocket-size lemon (2 tablespoons)
  • a few tablespoons of fresh chopped parsley, for garnish
Instructions:
  • Heat the crude inward a large saucepan over medium heat. When hot, add together the onion too sauté for v minutes until softened. Add the curry leaves, chilies, ginger too garlic, too stir for unopen to other few minutes.

  • Add the coriander, cumin, turmeric, mustard too cayenne, too stir for unopen to other minute. Next add together the tomatoes too create until thickened, nearly v minutes.

  • Now add together the poppy seeds, kokosnoot milk, cauliflower, carrots too salt. Cover too simmer for 10 minutes. Then add together the peas too create for unopen to other 10 to fifteen minutes until the vegetables are tender. Stir inward the garam masala too lemon juice. Taste for seasoning too suit accordingly.

  • Serve hot garnished amongst fresh chopped parsley.
